THE BOOK IS IN THE WORKS.</description><title>The New York Pizza Project</title><generator>Tumblr (3.0; @nypizzaproject)</generator><link>http://nypizzaproject.tumblr.com/</link><item><title>Dani's Pizza - "We have all the beers."</title><description>&lt;p&gt;&lt;span&gt;We were all geared up for a big Queens pizza trip this Saturday, but car trouble, crappy weather, traffic, and fate all had other ideas. We eventually made it out to Howard Beach, but the folks at New Park wouldn&amp;#8217;t let us shoot photos and asked us to come back another time. Same with the staff at Alfie&amp;#8217;s in Richmond Hill. Both places serve up solid slices, and are worth checking out. &lt;/span&gt;&lt;/p&gt;
&lt;p&gt;Lucky for us, we saved the best for last: Dani&amp;#8217;s Pizza in Kew Gardens, Queens.&lt;/p&gt;

&lt;p&gt;&lt;span&gt;Dani&amp;#8217;s is unassuming. It&amp;#8217;s signage is more 80&amp;#8217;s Miami nightclub than old school Queens pizzeria. Inside we were greeted by some of the friendliest, most jovial pizzamakers around. Yes, they said, take all the photos you want. &lt;/span&gt;&lt;/p&gt;

&lt;p&gt;One of the pizzamakers, Cesar, has been making pizza for 12 years. It only took him two days to learn how though. &lt;/p&gt;

&lt;p class="MsoNormal"&gt;&lt;span&gt;I started washing dishes, watching all those guys make pizza. Then they told me to start, and I think that&amp;#8217;s why I learned so quickly. I was watching, and when it comes to make it, I make it. &lt;/span&gt;&lt;/p&gt;

&lt;p class="MsoNormal"&gt;&lt;span&gt;Also, notice all that beer behind Cesar! &lt;/span&gt;&lt;/p&gt;

&lt;p class="MsoNormal"&gt;&lt;span&gt;We have all the beers. Some times, around October, we have 70 or 80 different beers.&lt;/span&gt;&lt;/p&gt;
&lt;p class="MsoNormal"&gt;&lt;span&gt;The owner don&amp;#8217;t drink, he just like to have the customers have it. The customers come, they just love it…pizza and beer, pizza and beer. &lt;/span&gt;&lt;/p&gt;
&lt;p class="MsoNormal"&gt;&lt;span&gt;There&amp;#8217;s a bar on the corner over here, they close around 1&amp;#160;o&amp;#8217;clock, so they&amp;#8217;re drunk, they come over here to eat pizza and drink beer.&lt;/span&gt;&lt;/p&gt;

&lt;p class="MsoNormal"&gt;Also, this happened:&lt;/p&gt;

&lt;p class="MsoNormal"&gt;&lt;span&gt;Cesar: &amp;#8216;Amigo, get this guy a cheeseburger and a Corona&amp;#8217;&lt;/span&gt;&lt;/p&gt;

&lt;p class="MsoNormal"&gt;&lt;span&gt;Basit, a local kid who moved to Flushing after growing up a few blocks from Dani&amp;#8217;s, has seen the neighborhood around Dani&amp;#8217;s develop.&lt;/span&gt;&lt;/p&gt;

&lt;p class="MsoNormal"&gt;&lt;span&gt;I used to live right up the street when I was young, and this used to be the spot to get pizza.&lt;/span&gt;&lt;span&gt; &lt;/span&gt;&lt;span&gt;The neighborhood keeps developing, and it&amp;#8217;s like new people come in, usually people from other countries, fresh, come to this area..it&amp;#8217;s good for people who are not familiar with America…&lt;/span&gt;&lt;/p&gt;

&lt;p class="MsoNormal"&gt;&lt;span&gt;I&amp;#8217;ve seen buildings that were never here, now they&amp;#8217;re here. They&amp;#8217;ve refurbished old buildings and stuff. This place hasn&amp;#8217;t really changed that much. A lot of the stuff around here, yeah, but not this place. They like to keep it original…that&amp;#8217;s what they do. &lt;/span&gt;&lt;/p&gt;

They got one across the street, but that&amp;#8217;s not really, it&amp;#8217;s not the same as a real pizzeria. People love pizza for the originality… you just get a slice…they make it by hand…I dunno. A lot of companies comin’ out with pizza…Little Cesar&amp;#8217;s Pizza and all this, it&amp;#8217;s not the same as New York pizza. New York pizza is the best. &lt;/span&gt;&lt;/p&gt;

&lt;p class="MsoNormal"&gt;&lt;span&gt;I should also mention that Dani&amp;#8217;s Pizza hosts a pizza eating competition in the summer. Three Saturdays in a row, from July 27 - August 8. According to Cesar, last year&amp;#8217;s winner took down 14 slices in ten minutes. &lt;/span&gt;&lt;/p&gt;

&lt;p&gt;&lt;span&gt;Tucked in to the bottom floor of a row house on Crosby Avenue in the Bronx, Louie &amp;amp; Ernie&amp;#8217;s Pizza has been serving up superlative slices since 1959 (math math math&amp;#8230;that&amp;#8217;s 53 years). According to Cosmo, who has been running the place with his brother John for the last 25 years Louie and Ernie were just two pizza makin&amp;#8217; brothers.&lt;/span&gt;&lt;/p&gt;
&lt;blockquote&gt;
&lt;p class="MsoNormal"&gt;They are two brothers, the original owners. They started in Harlem on First Avenue, right down the block from Patsys. I don&amp;#8217;t know why they came up here. But only one brother started up the business, that was Ernie. And then, he just ran with it. They tried selling it a couple of times over the years, but it never really panned out, they always took it back. Ernie is gone now. He died in ’91. That was my lucky break. He got sick, and someone else’s misfortune became a lucky thing for me and my brother. Other than that?  They were just pizza men. That was their trade.&lt;/p&gt;
&lt;/blockquote&gt;

&lt;p class="MsoNormal"&gt;And now Cosmo and his brother John are continuing that trade.&lt;/p&gt;

&lt;p&gt;&lt;span&gt;We&amp;#8217;re just a pizzeria. We’re one of the last of the Mohicans. No fried mozzarella sticks. What you see is what you get. You won’t find many places like this left. Most places out there nowadays have to play to the crowd. &lt;/span&gt;&lt;/p&gt;

&lt;p class="MsoNormal"&gt;Originally, it was just a neighborhood thing. It still has a neighborhood following. You get a lot of people who moved out coming back for a slice. We got a big cemetery up the block. After a funeral, they’ll pop in because they are in town. A family come in this morning. Their son is in the military. Their first stop when he got back from duty was to come in and get a slice.&lt;/p&gt;

&lt;p&gt;&lt;/p&gt;

&lt;p class="MsoNormal"&gt;Cosmo and John are lucky enough to have their family around at Louie &amp;amp; Ernie&amp;#8217;s. We got the chance to talk to their other brother, Ettori and his two pizza lovin&amp;#8217; kids Matthew and Nicholas, who had stopped by for lunch because &amp;#8220;the price is right.&amp;#8221; Ettori dropped some Louie &amp;amp; Ernie&amp;#8217;s history on us, but it was his kids who spoke truth to power.&lt;/p&gt;

&lt;p&gt;Our pizza team recently got the chance to spend some time at Brother&amp;#8217;s, where we spoke with Dennis, the owner, and Joe, who has been Brother&amp;#8217;s pizzaman for 40 years. &lt;/p&gt;

&lt;p&gt;&amp;#8220;Joe knows me from when I was born. My mother used to bring me here in the stroller.&amp;#8221;&lt;/p&gt;

&lt;p&gt;&amp;#8220;I bought the store about 3 years ago, and I worked here about 14 years prior to that. I started work here the day I got my drivers license. I always told the owner, &amp;#8216;when you&amp;#8217;re ready to go old man, I want in.&amp;#8217;&amp;#8221; -Dennis, Owner&lt;/p&gt;

&lt;p&gt;Joe started making pizza here 40 years ago. &lt;/p&gt;

&lt;p&gt;&amp;#8220;I remember they were looking for a pizza maker, I called them up, and I came to their place, I came over here, and I&amp;#8217;m still here.&amp;#8221; - Joe, Maker&lt;/p&gt;

&lt;p&gt;For Joe, making pizza is good work. He admits that &amp;#8220;working in a place like this for 30 years is like working somewhere else for 50,&amp;#8221; but he still loves his job. &amp;#8220;For me, right now, I don&amp;#8217;t wanna do nothing else except this.&amp;#8221;&lt;/p&gt;
&lt;p&gt;And as you might have guessed, making pizza for 40 years can really build up the ol&amp;#8217; &amp;#8220;pizza muscles.&amp;#8221; &lt;/p&gt;

&lt;p&gt;Dennis: &amp;#8220;When he takes off and goes on vacation, and I make the pizza, my shoulders hurt, and my hands hurt&amp;#8230;&amp;#8221;&lt;/p&gt;
&lt;p&gt;Joe: &amp;#8220;Maybe when you start, but to me, it doesn&amp;#8217;t bother me. I make 20 pies, or I make 200 in a day, I feel the same.&amp;#8221;&lt;/p&gt;

&lt;p&gt;Brother&amp;#8217;s is a straightforward New York pizza place that serves up a legit slice and not much else. But while customers come for the food, it&amp;#8217;s the people that make it more than just a pizzeria. &lt;/p&gt;

So many people when I took the store over, were happy and proud of me, that they come back here because of that, because they saw me grow up, they saw me come here and start delivering a week before I got my drivers license, and they&amp;#8217;ve known me now for 15 years and are glad.&amp;#8221; - Dennis, Owner&lt;/p&gt;

&lt;p&gt;Last but not least, Brother&amp;#8217;s has some serious NYC celeb cred.&lt;/p&gt;

&lt;p&gt;Popped into Pizza Suprema for an Upside Down slice this afternoon and noticed these cards next to the name plaques for each of their pies. According to the pizzaman, the cards are a response to a Department of Health regulation that requires pizzerias to record the time each pie was taken out of the oven, the temperature of the pie at that time, and to note when the pie will have to be discarded (4 hours after it was initially made). Initially I thought this was some sort of &amp;#8220;freshness gimmick,&amp;#8221; like a Born-On Date for a slice, but apparently Pizza Suprema has had these cards up for a over a year now, and a bit of research revelaed that this DOH regulation is at least a couple of years old.&lt;/p&gt;
&lt;p&gt;If you&amp;#8217;re as worried about the fate of the uneaten pizza as I was, don&amp;#8217;t be. &lt;p&gt;You don&amp;#8217;t need to hear it from us that the Staten Island shoreline is decimated. What we can report, that you might hear less about, is that there is a lot of people power, in the form of eager volunteers, out there, helping people rebuild their lives.&lt;/p&gt;
&lt;p&gt;One guy helping is Vito Parente, at&lt;a href="http://www.yelp.com/biz/pizza-wagon-brooklyn"&gt; Pizza Wagon&lt;/a&gt; in Bay Ridge. &lt;/p&gt;

&lt;p&gt;Hit up Sacco Pizza in Hell&amp;#8217;s Kitchen on Saturday afternoon. Sacco, &lt;a href="http://ny.eater.com/archives/2012/05/oldest_pizzerias.php"&gt;which is featured on Eater&amp;#8217;s Oldest Pizzeria&amp;#8217;s in NYC&lt;/a&gt;, has been serving up slices on the same block for over 50 years, and run by the current owners, cousins Dominick and Giuseppe (Joe, to most), for over 30 years. &lt;/p&gt;
&lt;p&gt;50 years on one block is a long time. Dominick says they&amp;#8217;ve been able to stick around because they put out a good quality product, and he and Giuseppe, along with their two sons, still put in 10 hour days. &lt;/p&gt;

There are actually lots of unique hoods in Queens and people live and work in them! Much of the borough is still undiscovered country to the hipster-elite, which makes it a refreshingly diverse kind of awesome. Not to mention that it has Amazing (yup, capital A) pizza.  &lt;/p&gt;

&lt;p&gt;We drove out Bayside to stop by VI Pizzeria, where we got to try one the best Sicilian slices on the planet, and talk to a guy who always eats pizza before going to the gym. VI has been around for decades, and the co-owner Louis, refused to let us take his photo without his partner there. Now that&amp;#8217;s loyalty. We got you next time.&lt;/p&gt;
&lt;p&gt;From Bayside, we rolled west on 495 and hopped on the Van Wyck to get to Amore Pizzeria, in what I guess I would call, Downtown Flushing. This joint is shouting distance to the Van Wyck on the way to the Whitestone Bridge, located in a strip mall, where it lives with a Pathmark, a liquor store that uses old Pathmark letters for its sign, a Carvel, several hucksters pushing DVDs in the parking lot, a drive-thru falafel stand, and a check cashing spot&amp;#8230;among others. &lt;span&gt;According to Andy, the pizzaman running the show for over 39 years, Amore is at the crossroads of America, with Citi FIeld just a stone&amp;#8217;s throw away, and traffic from the Whitestone Bridge and LaGuardia and Kennedy Airports constantly bringing people through the shop. &lt;br/&gt;&lt;/span&gt;&lt;/p&gt;

&lt;p&gt;What&amp;#8217;s amazing to me is that, despite its context, Amore is, and has been, a destination for northern Queens denizens for over 40 years. The place was jam packed on this Saturday afternoon. After I put down one of their heavy looking, yet unfathomably light and crispy slices, I could see why. That&amp;#8217;s what keeps Tommo (Tom-Oh) and his family coming back.&lt;/p&gt;

&lt;p&gt;We hit Phil&amp;#8217;s Pizza on Varick, just north of Houston, this week. Phil&amp;#8217;s has been run by the owner, Tony, since it opened in 1972. Tony ran the shop with his cousin until the early 80s, when his wife, Rose, came on board. Tony and Rose have been running the place together ever since. They&amp;#8217;re only open weekdays until 7, and not at all on the weekends. It&amp;#8217;s a two person operation, and they aren’t interested in hiring anyone else.&lt;/p&gt;

&lt;p&gt;&lt;em&gt;&amp;#8220;It&amp;#8217;s a family business and we wanna keep it that way. We&amp;#8217;re happy just working lunch, cleaning up, leaving, and having a normal life.&amp;#8221; - Tony, owner&lt;/em&gt;&lt;br/&gt;&lt;br/&gt;Phil&amp;#8217;s isn&amp;#8217;t as well known as some other West Village pizzerias, but they have a loyal following of regular customers, some of whom have been coming here since the 80s. We got a chance to talk to Angelo, a regular who eats at Phil&amp;#8217;s two or three times a week.&lt;/p&gt;

Squeezed between a shiny Dunkin&amp;#8217; Donuts and&lt;span class="msoIns"&gt;&lt;/span&gt; a shinier Chipotle on the north side of 23rd street between Lex and 3rd, Frank&amp;#8217;s has been serving its &amp;#8220;express&amp;#8221; slices for 49 years to Gramercy denizens and passerby&amp;#8217;s alike. From the outside, Frank&amp;#8217;s has the weathered look of an entrenched New York neighborhood establishment. The cozy, square inside, adorned simply with counters and stools lining opposite mirrored walls, and a classic glass display and menu board follows suite.&lt;/span&gt;&lt;/p&gt;

As we ate,&lt;span class="msoIns"&gt;&lt;/span&gt; we watched the post-work crowd, decked in everything from three-&lt;span class="msoIns"&gt;&lt;/span&gt;piece suits to paint-stained construction gear, roll in to grab an after-&lt;span class="msoIns"&gt;&lt;/span&gt;work snack or a quick dinner.&lt;/span&gt;&lt;/p&gt;

Maurice lives down the block and has been coming to Franks for 30 years. He likes Frank&amp;#8217;s because &amp;#8220;it’s a good, thick pizza, with a lot of cheese and a lot of crust.&amp;#8221; &amp;#8220;The only thing that’s changed here,” he says, &amp;#8220;is that the people have gotten a lot younger…in other words I’m getting older&amp;#8230; When you’re doing something good, even in the recession, you still make money.&amp;#8221; &lt;/span&gt;&lt;/p&gt;
&lt;p class="MsoNormal"&gt;&lt;span&gt; Maurice either orders &amp;#8220;a pizza or a meatball parmesan hero to go, and then posts up at a counter seat, gathers his trio of spices, and sprinkles them into a to-go spice pack he&amp;#8217;ll make out of some napkins or tinfoil. &amp;#8220;It’s an old fashioned way of doing things,&amp;#8221; he told me. &amp;#8220;You wanna season it when you get home. I only use three ingredients: garlic, oregano, and red peppers. For those that don&amp;#8217;t know, Bay Ridge is located in the southwest corner of Brooklyn, and sports a lovely view of the Verazano bridge as well as some excellent slices of pizza. &lt;/span&gt;&lt;/p&gt;
&lt;h1&gt;Pizza Wagon&lt;/h1&gt;
&lt;p&gt;We got to Pizza Wagon (5th Avenue and 86th st) at around 1:30 in the afternoon, the place was packed. &lt;/p&gt;

&lt;p&gt;We were immediately greeted with a loud &amp;#8220;NEXT&amp;#8221; after stepping inside. We ordered &amp;#8220;three round&amp;#8221; and found seats in a recently vacated booth.&lt;/p&gt;

&lt;p&gt;After sampling the goods, a thin-crust slice with a sweet sauce, quite good, we found Vito, the Wagon&amp;#8217;s welcoming co-owner, who proudly explained to us that Pizza Wagon is just a &amp;#8220;pizza and soda&amp;#8221; place (no hero or salads, and only a limited number toppings).&lt;/p&gt;

&lt;p&gt;Vito&amp;#8217;s father-in-law Nunzio bought the Pizza Wagon in 1985 from his wife&amp;#8217;s brother Philip, who opened the shop in 1966. It is now co-owned by Vito and Anthony (Nunzio&amp;#8217;s son). The place has been selling the same round and square pies ever since. One couple we spoke to told us that they travel over an hour a few times a week to grab a couple of slices and icees from the Wagon. &lt;/p&gt;
&lt;p&gt;&lt;strong&gt;Women in the Workforce&lt;/strong&gt;: As Vito told us, &amp;#8221;ever since we started, there has been a girl behind the counter.&amp;#8221; It started with Vito&amp;#8217;s wife&amp;#8217;s cousins and aunt back in the 70&amp;#8217;s, then Vito&amp;#8217;s wife and Mother-in_Law in the 80&amp;#8217;s and continues today with his daughter, Leonarda. &lt;span&gt;To find a woman working behind the counter of a pizza place is unique, and Pizza Wagon boasts that a woman&amp;#8217;s presence in the shop is one of their proudest traditions.&lt;/span&gt;&lt;/p&gt;

&lt;p&gt;Customers at the Wagon told us that Nino&amp;#8217;s on 92nd street and 3rd avenue was another spot we had to try, particularly the Grandmama slice (not your typical grandma slice, its actually called &amp;#8220;grandmama,&amp;#8221; like old school &lt;a href="http://www.defynewyork.com/2010/01/18/converse-aero-jam-with-react-juice-larry-johnsons-signature-shoe-in-the-classic-hornets-colorway-grandmama-review/larry-johnson-grandmama/"&gt;Larry Johnson&lt;/a&gt;, only thinner and with less cheese). The Grandmama ranks up there with the top slices we&amp;#8217;ve had so far, and certainly worth a pizza-lovers trip out to Bay Ridge. As an added bonus, the owner blessed us with some Spumoni from L&amp;amp;B&amp;#8217;s for dessert. &lt;/p&gt;

&lt;p&gt;Elegante was another spot that came highly recommended by both locals and the pizza inclined. Its on 69th street and 5th avenue, which was just a short bike ride away from Nino&amp;#8217;s. Elegante has been there for 70 years - making it one of the oldest places we have been to. Tony, the sincere and soft-spoken owner, and his brother bought the shop about 30 years ago when Tony was just 17  (pause to consider what you were doing at 17). Elegante&amp;#8217;s operation is rather austere, with just Tony and his brother alternating days running the shop, and Tony&amp;#8217;s son lending a hand on the weekends.&lt;/p&gt;
